Then and Now

It is funny to me how some things change so much, yet some things remain the same.

As I was going through the [hundreds of] pictures from our first beach trip of the summer, I noticed that some of the pictures reminded me of ones I took last year on our first beach trip. I had fun going back through and looking at last years pictures when he was just a teeny, tiny baby who didn't need much more than a little milk, a clean diaper, and a little love. Oh my, how that has changed!

And, I also noticed that he looks pretty miserable in most of these "then" pictures. I promise he was a happy baby. Promise.

Did he like the pool?


I think so.





He seems to at least know the motions of swimming. I have nothing to compare him to, but he seems like he is going to be a good swimmer. One thing is for sure...he truely loves it. He didn't want to get out.



He even made some new friends.



I think he needs his own pool!

Can I Move Here?

I am officially WAY behind. Like, way.

We have been so busy lately, and I really can't put my finger on what exactly. I guess life just gets in the way of blogging sometimes.

Back to the title of the post, we are currently staying a few days with my incredibly cute pregnant cousin/BFF in Perdido Key, FL while Leon is at a conference in Biloxi. We came last Friday morning so we could get a little "vacay" for the weekend before he had to go. She lives on the bay and has this as a back yard view:


I'm jealous, very jealous.

We have already had so much fun! Bishop is loving it here. Aside from loving Uncle Nate and Aunt Mandy, he also LOVES the water, the sand, and the boat (or "bope" as he says). We are about to go to the pool after his nap today, and I'm sure he will love that as well. There is just so much to do here and it has been great so far for us all!

We have been here 4 days and have about 300 pictures already, so I thought I'd go ahead and post some the first two days before it gets [more] out of hand.

On Saturday we went out on their boat and had about the most fun that could be had in one day. It was a very long day, but we really all enjoyed it.

Later that afternoon, we went out further into Perdido Bay and ended up finding some dolphins. We saw several different pods of them, and they almost put on a show for us. I'm pretty sure one almost ended up in the boat! Luckily, I had my phone and got some videos. I'm like a little kid when it comes to dolphins, so, it pretty much made my day. Bishop really did like watching them too. How could you not?!?





Then we headed home to relax.


Then later that night we had dinner at The Hangout....a very FUN and delicious place to eat.

Recipes

I'm not normally a recipe blogger, but I just have to say that the Pioneer Woman really has a lot of good stuff that I just have to share.

My favorite that I have had lately is taco pizza. Oh my goodness, it is delicious! Bishop is a very picky eater and he even liked it. Since we are meat-eaters around here, I did add some ground beef seasoned with a little taco seasoning. The best part was that I already had everything I needed on hand from the tacos I made last week. Oh, and I bought canned refrigerated pizza crust instead of making my own...some folks don't have that much time!! Maybe next time I will try it...I'm sure it is delicious.

I might add the tacos I made last week were good as well, but she warns they are messy and I didn't listen. Like, REALLY messy.  It stressed me out. My kitchen was a wreck. All was good until the frying part. Obviously, I need more practice because I ruined the first few. Once I removed myself from the mess in the kitchen, they were really good. Take that as a second warning if you try them.

Another favorite was beef with peppers. It was actually more of an PW INSPIRED recipe. I didn't have sherry (and I live in Booneville, a DRY county), I swapped out the rice noodles for rice, and used a different kind of steak (I live in Booneville.. people look at me funny when I  ask for rice noodles and flank steak) and it was still fabulous!

I'll definitely be making these again and trying more of her recipes. I love a good recipe suggestion, so if anyone has any, please suggest away.  I get tired of making the same things over and over!

Easter 2011 (finally)


Well, the Easter bunny was pretty good to this sweet boy.



After we opened our Easter baskets, I dyed eggs while Bishop watched and ate his peanut butter and toast.


Then, we went to church and to Grandmother's for lunch.


And had a photo-shoot (nothing unusual there)..





We opened more Easter goodies from Granna.


Then we had an Easter egg hunt.

That was our Easter.

Oh, and Lent was over, so I got........


Leon is such a sweet Easter Bunny!

Since we joined the Mehodist Church a few months ago, I did a lot of research on my own and decided to take on a Lenton challenge. Since Lent is a time of fasting, prayer, self-denial, repentence, and soul-searching,  I also gave up Facebook. I'm not going to lie, I missed candy terribly...Facebook, not so much! I literally ate candy for breakfast lunch and dinner the entire week after...is that sad??!?!
